Let Us Eat Tacos!

Lettuce tacos are perfect for cutting carbs. These romaine heart spears leave you with the same crunch satisfaction as a taco shell without the guilt. I topped mine with ground beef, a quick corn salsa, sour cream and cheese! It's a light, fun-to-eat meal you'll be making again soon. 


Ingredients:

1 head of romaine hearts
1/2 lb. ground beef
Corn salsa (spread)
Sour cream (spread)
Cheese (shredded)

Directions:

Season and brown the ground beef in a pan. Cut bottom of lettuce off, pull leaves apart. Spread with sour cream, lay meat on top. Spoon on corn salsa, and sprinkle cheese!


Corn Salsa

1 can black beans (drained)
1/2 cup yellow corn
1/2 green pepper (diced)
1/2 red pepper (diced)
1 juice of lime
4 sprigs of cilantro
Salt & pepper (to taste)
